OUR HANDCRAFTED BEERS
ON TAP
Delta Breeze Kolsch
An easy drinking and refreshing authentic Kolsch. German pilsner malt & noble hops from the Hallertau Valley are used in crafting this beer. The Kolsch yeast gives it just a touch of tartness and a very dry finish.

Hazy Trail Hazy IPA
It has been said that not all who wander are lost, those wayfarers are undoubtedly trekking the Hazy Trail. Plump with the aromas of fresh-cut honeydew melons, thornless berry plants, and a chorus of tropical fruit, this hazy IPA boasts a soft malty footpath that ushers you further into a fog of fruity confusion. Eventually you succumb to the juicy surrender that leaves you unable and unwilling to see the path in front of you as all you can think about is your next sip with zero intention of turning back.
6.7% ABV, 60 IBUs
‘Bout It!, ‘Bout It! Hazy Double IPA
This Hazy Double IPA serenades you first with a song of island fruit and white sand beaches. Eventually the pineapple and mango give way to sticky sun-ripened stone fruit and rounded citrus notes from the heavy helping of Citra and El Dorado dry hop additions. Semi-sweet nectar and 100% pulp-OJ dance with your palate like a playful wave at low-tide while the silky malt bill holds strong against their advances. The finish is hoppy but not bitter, rich but not filling and begs only one question.... Are you 'Bout it 'Bout it?
8.1% ABV, 50 IBUs
Baltic Porter Baltic Porter
This is a dark, rich, and substantial Porter. The flavor is complex and smooth with a moderate level of malty sweetness, and some roasted character that stops well short of burnt or harsh. This beer has a lot of body and a fair amount of alcohol, so it makes the perfect winter sipper.
8.3% ABV, 31 IBUs
Peanut Butter On My Baltic Baltic Porter
“You got peanut butter on my Baltic!”, “You got Baltic on my peanut butter!” This is our renowned Baltic Porter kicked up with peanut butter.
8.3% ABV, 31 IBUs
New Leif American Pale Ale
Made simply for drinking this American Pale Ale pours bright golden with a persistent white head from which familiar pine and citrus aromas emanate. Dry hopped with Centennial and fermented with Chico yeast this beer is not over complicated and lends itself to easy-drinking with it's balanced bitterness and dry but slightly bready malt character.
5.9% ABV, 43 IBUs
Out Of Your Element Hazy Pale Ale
This Northeast-inspired Pale Ale is very well balanced between the malt and hops. The malt aromas and flavors of cereal and bread are balanced nicely by the aromas and flavors of the citrusy, earthy, and piney hops. The finish is dry and slightly tart, leaving you wanting more.
5.4% ABV, 31 IBUs
I.P.K. India Pale Kolsch
Bright aromas of lemon zest, kaffir lime leaves, and pineapple, radiate from the persistent white head as the Idaho-grown Pilsner malt provides an iridescent straw hue that leaps from every facet of the glass. The palate bursts with citrus and tropical hop flavors from a unique blend of Idaho-7, Amarillo, and El Dorado hops used throughout the brewing and dry-hopping while remaining nearly devoid of the traditional bitterness native to the land of IPA. Place all of this atop a delicate, clean, Kolsch base.
6.2% ABV, 31 IBUs
Zephyr Weisse Berliner Weisse
Dubbed the “Champagne of the North” by Napoleons troops this refreshingly sour wheat beer is a session able alternative to a traditional winter ale. Brewed with Pilsner and wheat malt it finishes dry with a clean lactic acidity reminiscent of Lemonade.
Comanche Creek German Pilsner
This classic German lager pours light yellow-gold and brilliantly clear with a pillowy white head. Pilsner malt flavor and aroma lead to a crescendo of flowery, spicy Czech noble hops that sweep your palate and nose. Clean, session-able, and true to style, this lager is named for the trail closest to our brewery and will pair with whatever hike, bike, walk, or chair you choose to enjoy it with. Prost!!
5,3% ABV, 32 IBUs
Cliff Hanger Double IPA
Effervescent and orange-gold with a frothy white head this Double IPA is a mountain of hop flavor and aroma with a supportive yet restrained malt backbone to assist your ascent. lively notes of apricot, orange zest, and pine breeze erupt from the glass while deeper expressions of grapefruit and pine resin hang on your palate in a classic west coast fashion. Expressive and aggressive this climb is not for the faint of heart, secure your harness and prepare for an adventure.

Hibiscus Rye Red Lager
Always looking for new trails to traverse we thought we would propose the unlikely marriage of two heritage ingredients used by humans for 1,000’s of years. In this lager you will find a crisp, floral, and fruity beer that brings malt complexity and hop flavor to the forefront without getting too sweet or bitter. The nose is packed with notes of ripe raspberry, hops, and hibiscus character followed up by toasty/malty wafts that represent just as well on the palate. Neither malt nor hops are in total control as each are accented ultimately by the floral, fruity, and tart hibiscus character that lingers pleasantly after you've sipped. This crystal-clear Red Lager finishes dry and is the perfect companion for your backyard festivities this summer.
5.9% ABV, 38 IBUs
Electric Oats American IPA
An extremely well-balanced American IPA with lots of tropical fruitiness in the aroma and flavor. This beer is dry-hopped with Simcoe and Mosaic hops. It has a nice malt backbone that balances out the West Coast bitterness.
6.8% ABV, 60 IBUs
Squeegee Double IPA
Named for it's ability to clear both the mind and the palate, Squeegee DIPA is a throwback to the early days of the DIPA. The rich color and the initial sweetness come from the generous use of Crystal and Munich malts and is followed by a moderate hop bitterness. We use six varieties of hops in the kettle and in double dry-hopping. The hops provide citrus, pine, and tropical fruit flavors and aromas.
9.0% ABV, 94 IBUs
Heart Of Gold Blonde Ale
With it's clear, light-gold color and it's bright white head, this attractive Blonde Ale draws you in to taste and enjoy it's refreshing summer flavor. This beer is very approachable, and is not exclusive in any way. It was created to celebrate the diversity of all people, with the idea that inside every good person is a heart of gold. This beer is a very session-able, balanced, and flavorful beer. At first one will enjoy the slightly sweet malt flavor, followed by the piney and citrusy hops, and then it finishes off with a very dry finish, leaving one to conclude this beer truly has a "Heart of Gold".

Pineapple ‘Bout It!, ‘Bout It! Hazy Double IPA
Unabashedly juicy this double hazy IPA serenades you first with a song of island fruit and white sand beaches. The pineapple was added during fermentation along with a heavy helping of Citra and El Dorado dry hops. It begs only one question.... Are you 'Bout it 'Bout it?

Explorer Series Release

American ‘Bouty Double IPA
For this beer we took what we thought would be just a little side trip off the beaten path, and we wound up in strange place. We wanted to see how changing just the yeast and dry hops can affect an otherwise familiar beer. We started with our 'Bout it 'Bout it wort, and then added American Ale yeast instead of our usual Kolsch yeast, and then we dry hopped with Idaho 7 instead of our usual El Dorado and Citra hops. The result is a radically different looking and tasting beer than 'Bout it 'Bout it. It has the look of a West Coast IPA, a mellow malt character, and yet the citrusy, fruity, and candy-like quality of Northeast IPA, which leaves you knowing you are definitely off the beaten path with this beer.

Secret Trail Brewing Company is an artisan craft brewery. STBC is a collaboration of Charlie Barrett, Michelle Barrett & Jesse Fischer. We seek to be a community-focused, locally- sourced brewery making both the classic styles and original innovations. We have a 3,200Sq Ft. 15-barrel production brewery & tasting room located in the up-and-coming beverage district located in the Barber area of South Chico. Our beers are created by Charlie Barrett, our Head Brewer, & Jake Dickman, our Assistant Brewer.
Our Taproom was created to be inviting & comfortable. Jesse Fischer, Michelle Barrett & our staff will welcome you into a rustic-modern, environment to enjoy our craft beers. Kids & dogs are welcome. With our push to change the city code for allowance of taprooms within manufacturing zones, we are the first of the newest movement of small craft breweries with taprooms, in Chico. We hope other established & future beverage production facilities, within the city limits, will harness the ability to grow the craft movement of beer, distilled spirits, & ciders.
We aim to make the highest quality, freshest beer possible for Chico and beyond. Remember to "Live and Drink Off the Beaten Path"
