Part of our staff brew series. This one comes from Aaron who had a funny story about fighting bears in Alaska which earned him an interview. Solid malt backbone and high ABV give way to immense tropical flavors. El Dorado, centennial, mosaic and simcoe hops combine for a bouquet of tropical fruit flavors including mango, grapefruit and papaya.

OUR BREWING
philosophy
It started when Jeff and Jenny brewed two beers to give away as wedding favors at a brewery in San Luis Obispo where they went to college. Homebrew projects and burst bottle explosions ensued in the years after. But a casual passion soon turned career as Jeff announced to Jenny that he had quit his job and had been accepted off a wait list to brew school in the UK. You’d call them crazy, adventurous, unpredictable….a wildcard. Their story is one of the unexpected; a place where there are no limits, where perseverance and a free spirit will turn dreams into reality.
Their experience abroad led them to a brilliant unique brewing philosophy: Wildcard seeks to blend the time honored, complex English style malts with the beloved Pacific Northwest’s famous doses of hops, for an amazingly balanced combination in each pint.
