Smoked Tofu, Apple and Gouda Sandwich

This vegetarian sandwich uses thin slices of smoked tofu, apple, Gouda and arugula on dark bread to hit tangy, sweet, earthy and peppery notes with little effort. The recipe calls for aged Gouda, but you can use vegan Gouda-style slices instead. Though this recipe is built for one, it can be easily scaled up for a group.

  • 1 tablespoon mayonnaise
  • 2 slices pumpernickel bread
  • 2 ounces smoked tofu, thinly sliced (see Where to buy)
  • 1 ounce aged Gouda, thinly sliced
  • 1/2 small tart or sweet-tart apple, such as Granny Smith or Golden Delicious, stemmed, cored and thinly sliced (2 ounces)
  • A few leaves baby arugula
