We are all looking for quick and easy recipes to make during this time period! Everyone is so incredibly busy! We are also looking for Budget Friendly Meals with the cost of food going up regularly! Well Beans and Rice come to mind for sure! What is great about all these recipes is that they are easy to make, affordable and very tasty, healthy and full of protein! They feed a crowd, are great as left overs and even freeze well! All of these recipes are either Vegan or Vegetarian which makes them even more affordable. You can always add whatever you would like to the dishes! I like to add some Vegan sausage or mince sometimes along with other vegetables! You do you!
Saving on our Grocery Bill is a big plus! I am going to start sharing some more budget friendly meal ideas and other ways to save on groceries and more so stay tuned! For all of these recipes you can use can or dry beans. It is your choice. Both are inexpensive but you do save on dried beans. If you have the time to make them up go for it! It’s crazy how quick they are to make in the instant pot or the crock pot. Rice is nice and very affordable, you can use white rice, jasmine rice, brown rice, yellow rice and the list goes on. Purchasing it in larger quantities makes rice even cheaper!

I have to be honest… My personal favorite is the one by The Mississippi Vegan… it’s the best!…as a treat I added some Vegan Sausage and it was over the top! Sure hope you give it try! I have to add that my favorite thing to do with the left over is to make burritos! Just stuff those soft shell with guac, sour cream, cheese, pickled jalapeños and whatever else and roll them up… pop them in the over to be warmed and YUM!!! They also freeze great so you can take them out of the freezer and have them as a quick meal! That is just the tip of the iceberg with what you can do with the leftovers!
