It might look messy… and that’s okay. 🤍 The goal isn’t perfection — it’s release. April 16 has elite brunch timing 🍳✨ with Eggs Benedict Day and Mushroom Day landing on the same date. 🍄🥓 🍳 Preparation: 1️⃣ 🧈 Make the Hollandaise Whisk egg yolks and lemon juice over gentle heat. Slowly stream in melted butter until smooth and silky. Add salt. Keep warm. 2️⃣ 🥓 Cook the bacon Cook until golden and crisp. Set aside on paper towels. 3️⃣ 🍄 Cook the mushrooms Melt butter in a pan over medium heat. Add mushrooms and let them sit untouched for a couple of minutes to caramelize. Stir, then add shallots and garlic. Cook another 2–3 minutes until everything is soft and golden. 4️⃣ 🍋 Season Add a small squeeze of lemon, a light drizzle of truffle oil, and salt + pepper to taste. 5️⃣ 🥚 Poach the eggs Simmer water + vinegar. Create a gentle swirl and drop in eggs. Cook ~3–4 minutes (set whites, runny yolk). 6️⃣ 🍞 Toast & assemble Lightly toast the buns—just enough for structure, not crunch. Assemble: brioche base → bacon → truffle mushrooms → poached egg → generous spoon of hollandaise → sprinkle of chives. 7️⃣ 🍽️ Serve immediately This is not a “wait around” situation. ✨ Very much like that coverage you know you need badly.
