This crispy quinoa chicken salad has both… crunchy quinoa, loads of veg, and a creamy peanut dressing with high-protein chicken.

419 calories, 33g protein, 6g fibre per serve.

Ingredients:

  • 1 cup dry quinoa

  • 1 tbsp soy sauce

  • 1 tbsp chilli crisp oil

  • 4 chicken thighs, roughly chopped

  • 1 tbsp ginger (grated or finely chopped)

  • 1 garlic clove, chopped
